The Nordic countries share a culinary heritage shaped by the contrast between lush summers, bountiful autumns and harsh winters. This has taught us to celebrate fresh produce in season, as well as savouring flavours for darker days. Traditions of preservation and cooking are similar throughout the Nordics, uniting a region otherwise rich in local specialties and regional identity. What we eat, and what our ancestors ate, is an important part of our story. At Kontrast, we want to tell you that story.
A dish is never better than the quality of its ingredients. We work with caring and thoughtful small-scale producers and farmers that provide us with the best quality produce available. All of them are committed to working in tune with nature – treating the soil well, giving their animals the best possible care, and working in a way that keeps emissions to a minimum.
Sustainability drives our choices. Beyond our commitment to choosing the most sustainable and high-quality produce, we believe that restaurants have the potential to spread awareness to their guests by sharing the origin of the dishes when we place them in front of you.
While rooted in tradition, we use the finesse of modern fine-dining to convey these traditions and evolve them. We draw in influences from the far East, connecting cultures that are vastly different, but have some surprisingly similar approaches. Our chefs strive to create remarkable dishes that extract the full potential of their ingredients, giving our guests a contemporary Nordic dining experience that is entirely its own.
